What have they got to lose? 30% cut of app store, icloud, apple+ TV, Safari users, Maps users, Incremental Market Share. Realistically lots of people could end up preferring Linux over MacOS, why risk it?

I do a lot of both. Excel really is great for data where there are less than say 100k rows. Its just so easy to see exactly what you're doing and what the data looks like. If you have millions of records Python really does better but I
