Think the watches are primarily suppose to be used on the go. Like working out, walking around town or glancing at while driving. Not sitting at a desk with a Mountain Dew in one hand and your mouse in the other. Synced desktop notification

I think they care, but they don't necessarily equate using Apple over Google as to be being more secure and private (the premise in this thread). They likely see both as secure enough.

I may be missing something here, but why would you need to change the stock installed tools in /usr/bin? Seems like an easy way to screw up your OS installation. And it's not like a VM where you can rollback to a snapshot or

Fair points. For me it was just interesting to read about his views about himself (implicitly) and how he observed everything happening in the last decade. It's quite a unique and informative perspective as a sort of culture piece.
