There has already been a vastly simpler system that predates OS X: Linux or BSD combined with X11 and an arbitrary window manager. Just stay away from anything that calls itself a "desktop environment" and you should be fine. Personal recom

You can install Linux on it, though, which can be superiour to OS X. On the other hand, it's a very irritating that one is forced to buying an OS that one is never going to use on the machine.
