I think one of the biggest reasons theres not more of a push to get away from monocropping is the amount of labor required for harvesting, tending, planting, etc. Well that and the overhead for having your production span multiple outgoing

Is there a point where the conversation shifts from we need to produce more for less to feed or growing population to we need to stop growing. Obviously a hugely loaded subject, but also worth thinking about.

There are commercial scale providers of bulk alcohol that is taxably considered beer. It's not quite as cheap as neutral grain spirits, but ours definitely a lot cheaper then brewing it.
