Maybe look for a job at a local non-profit as a jack-of-all trades technologist. I do this and it offers great flexibility, a lot of human interaction across the organization, the ability to spend time with the kids, ect.

This is very simple, take the money for the "less interest != boring" job. Save/invest the money for when you CoL is higher (kids, eldery parents, illness, ect.).

If you want to be a founder, then you need to learn sales/bizdev. Try to find some sort of sales gig for weekends and use earnings to pay off student loans or build up your burn pile.

This is probably most of it for lower tiered schools and for libarts. I know several adjuncts that teach law/business and they are largely indifferent to their adjunct pay - a drop in the bucket. The title 'adjunct lecturer'
