It's not true, my P1S+AMS has never touched the Internet and I was able to set it up fine on an isolated wifi network out of the box.

You might like Joplin or Logseq, which are open source. I hope one day the folks at Obsidian will make it FOSS. I don't think it will negatively affect them at all.
