I love this idea of the <picture> element which hopefully most browsers will adopt soon but how will this support on the older iPhones that cannot upgrade to iOS7 (iOS8 soon). Especially with Apple not supporting these devices anymore

Focus is always the key. Without it you cannot achieve what you want without getting distracted. Another hint which I often receive is to always narrow your market as much as possible. You can always expand later.

I agree. This is a good period to be able to reflect and improve on services, coding and fix bugs. Doing a soft launch could start your way to getting power users whose input and feedback is valuable to improve the website in the future.
