I think it's better to stick with what you're familiar with. To use books and written languages as an example, can anyone name a writer who suddenly wrote better books when he switched to a different language?

I second the Rsync recommendation. I back up our servers every 15 minutes with it. In the event of a catastrophe, we will have lost 15 minutes worth of data, at most.
