While I get your point, I think it's a case of the perfect being the enemy of the good. This project is miles away from being a Ring doorbell. I guess the author found the ease of use of an ESP32 to be an acceptable tradeoff (or didn't consider its firmware to be a problem). Others may feel differently, and can modify their build accordingly.
