Bar bad floppies I don't remember ever having an installer issue. Unrecognized/unsupported hardware is another thing but I always could finish the install and at least reach the console login prompt. I've never used bleeding

Fedora (or debian, or archlinux or whatever distro you choose) doesn't force you into an UI. All of them have minimal, server and/or "flavored" versions and you can always uninstall and install whatever you want.

Copyleft licences rely on copyright. If that was the case, companies would not massively avoid gpl licensed code. Obviously some do it illegally but unenforceable is not the correct word to use.

Choices are always opinionated by the dev but you can always fork and change to obtain what you need. MacOS doesn't let you do that and isn't easier to switch to.
