Pair programming on a company's app is the single easiest way to know what you are getting yourself into. I recently did a full day of this and by the end I understood their whole stack, where the system failed, and managed to find a, "oh shit look at that... that's awful" part of the code. I would take 4 hours in a potential employer's codebase in a heartbeat.
