Apple Screen Sharing is probably the best when it's purely within Apple products. But if the mix is more heterogeneous, I've found Sunshine (server) and Moonlight (client) is great. This open source software was built for lag-free gaming over a network, but I've found they're great for desktop usage too. I frequently use it to remote into my Windows tower. Feels about as responsive as if I was sitting at the desk using the tower directly.
