Settings -> All Settings -> Smart Features -> Turn on [off] smart features in Gmail, Chat, and Meet... If you disable that feature, all AI everything goes away

Settings -> All Settings -> Smart Features -> Turn on [off] smart features in Gmail, Chat, and Meet... If you disable that feature, all AI everything goes away (including sorting by category). There are some more targeted features you can disabled to disable writing helpers if you want.
