Thank you! We're glad to take your feature request into consideration. We have had discussions regarding auditing in Mathesar[1], though it's not explicitly documented in the roadmap yet. We do have plans to implement Undo & Redo support for data editing operations in our roadmap[2] which would depend on the auditing implementation.
