It seems that a lot of people want a "dumber phone" but also don't want to give up thing like Maps/Spotify/Quality Camera/2FA app/etc. I am one of those people have found a solution that has worked well for myself. (iOS only) I use Screentime and give the password to my partner. I have blocked downloading new apps and websites I waste time on. This lets me have access to useful apps and I can look things up on the internet (but not browse reddit). If can always temporarily get the password from my partner if I need a new app or am traveling. I highly recommend trying it out if you want a dumber-phone but don't want a dumb phone.
