I've done a similar setup at home with a full Unifi setup, PiHole, DNS over TLS, Let's Encrypt certs for internal devices, multiple wifi networks and other "It's COVID and I'm bored" goodness. I've had to turn most of it off. PiHole means every single web site issue for any user on the WiFi ends up on my plate immediately. Wifi network segments mean Minecraft doesn't "Just work" for the kids and their friends. IOT networks means Airplay doesn't find devices. SDDP doesn't work, etc. Having a functional home network turns out to be more important than having a secure home network.
