This may not be relevant to your case but I don’t see it mentioned. I have worked with several large tech companies where I did not sign the non compete. I didn’t bring it up as an issue but I very clearly didn’t sign or otherwise initial the paper work. Strangely I have never once had one of those companies come back and ask me why I didn’t sign it. I think that companies try to get what they can out of you.
