Good Luck, at least you have a degree in software. My degree was in chem engineering, and despite being a programmer for the last 11 years, I am not being taken seriously. I have built a dishwasher to prove my embedded systems skills, that's what has gotten me closest to making a jump into specifically embedded systems. My recommendation- Make a JS/React app. (and tbh, I imagine full stack would probably be best for anyone's future)
